This is another attempt to fix the cookie-less situation in my house.
Also, I get to try a recipe from The Pioneer Woman.
I get to kill 2 birds with one stone. How cool is that?
Added to that, these are malt cookies. I don’t know about you, but I adore malted milk powder. Chocolate malt milkshakes… HMMMMMMMMMM.. 🙂
Anyway, I digress.
To make these cookies, I started by creaming the butter and the sugar until the mixture became light and fluffy.
The eggs were then added, followed by the vanilla extract. I beat the mixture after each addition so everything was incorporated.
Then in went the malted milk powder. YUM. YUM. 😛
And that was beaten until it was combined with the mixture.
The flour was added in 3 additions, and beaten too.
And finally, I stirred the chocolate chips into the mixture.
Once that was done, I chilled the dough for a minimum of 2 hours.
Do not be tempted to skip this step.
No, the dough really isn’t cold enough right now.

I used my trusty ice cream scoop to dish the cookies onto my baking trays, and baked the cookies.
And what came out looked like this:

Malted Milk Chocolate Chip Cookies (Makes about 40 cookies)
Adapted from The Pioneer Woman
225g unsalted butter, softened
3/4 cups Golden Brown Sugar
3/4 cups Sugar – I used 1/2 cup
2 teaspoons vanilla extract
2 cups plain flour
1 1/4 teaspoon bicarbonate of soda
1 1/4 teaspoon salt
1/2 cup (rounded) malted milk powder – I used Horlicks
1 bag (12 Ounce) milk chocolate chips – I used dark chocolate buttons
Preheat oven to 180C.
1. Cream butter, then add both sugars and cream until fluffy.
2. Add eggs and beat slightly, then add vanilla and beat until combined.
3. Add malted milk powder and beat until combined.
4. Sift together flour, baking soda, and salt. Add to butter mixture, beating gently until just combined.
5. Add chocolate chips and stir in gently.
6. Drop by teaspoonfuls (or use a cookie scoop) and bake for 10 to 12 minutes. Bake less if you want chewy cookies; more if you want crispy cookies.
