cajun chicken tomato rice

Do you like Cajun seasoning? I love them to bits.

I seriously think you can get me to eat anything if Cajun seasoning is involved. One of my favorite dishes is the Blackened Cajun Fish from the ex-Trigg Island Cafe in Perth. I can eat that every single day and never get sick of it.

What is Cajun seasoning? It is a blend of spices that includes bold flavors such as garlic and onion powders, cayenne pepper, paprika, dry mustard, thyme, black pepper, cumin and/or celery seeds. The seasoning can be rubbed over meats, seafood and even be used to flavour French fries!

Today I wanted to cook something spicy, and naturally, Cajun seasoning came to mind. I also wanted to do something with my tub of Basmati rice.

In the end, I decided to cook Tomato Rice using the Basmatic rice before combining it with the chicken and vegetables which I cooked separately.

If you like spicy and robust flavors, this is a great dish to try.

Here’s how.

Soak the Basmati rice for at least 30 minutes before cooking. Wash the rice and place in the rice cooker. Add water or chicken broth, season with salt and pepper, and place a tomato in the middle of the rice.

Hit the START switch on the rice cooker.

Combine the Cajun seasoning with the chicken thigh. Mix to coat the chicken.

Heat a skillet. Add a little olive oil. Fry the chicken, in batches, turning them half-way, until the chicken pieces are cooked through.

Transfer the cooked chicken into a bowl. Set aside.

When all the chicken pieces have been cooked, carefully wipe the pan with kitchen towels. Add a little more olive oil and saute the chopped onion until they have turned soft and are slightly translucent. Add the minced garlic and cook a further 30 seconds.

Add the chopped red pepper and cook about 2-3 minutes more, or until the peppers are soft. Set this aside.

When the rice is cooked, mush the tomato and stir into the rice.

Add the cooked vegetables and chicken and stir until everything is well-combined.

Sprinkle chopped Italian flat-leaf parsley and serve hot.

Cajun Chicken Tomato Rice

For the rice
  1. 2 cups Basmatic rice
  2. 3 cups water or chicken broth
  3. 1/2 teaspoon salt (omit if you are using chicken broth that contains salt)
  4. 1/4 teaspoon black pepper
  5. 1 large tomato

  1. 500g boneless chicken thigh, cut into bite-sized pieces
  2. 2 tablespoons Cajun seasoning
  3. 1/2 large onion, chopped
  4. 3-4 cloves garlic, minced
  5. 1 medium red pepper, chopped
  6. Salt, to taste
  7. 1 packet Italian flat-leaf parsley, chopped
