Being the auntie that I am, I was at the supermarket the other week when I saw that a cooking show was being screened at the check out counters.
Well, watching someone cook was way more interesting than looking to see what the auntie in front had in her shopping basket. 😛
The chef on TV was demonstrating how to cook a quick Nonya curry chicken dish. I was fascinated by how easy it looked.
So leaving the LAM to hold our place in the queue, I scooted back to the aisles to look for the curry paste.
Using this curry paste, I cooked a pot of chicken curry this morning for lunch and it was all gone by the end of lunch.
I have to admit that I was very pleased. The fact that something so tasty could be made so quickly using a store bought sauce is fantastic! 🙂
Here are the instructions on how to make this dish.
In a hot wok, stir-fry the red onion in vegetable oil until the onions start to caramelize.
Add the lemon grass. Stir fry for 30 seconds.
Add kaffir lime leaves and curry powder.
Stir to combine. Add the curry paste.
Add the chicken into the wok.
Stir to coat the chicken. Add enough water to barely cover the chicken.
Bring the liquid to a boil and simmer until the chicken is cooked through. This should take about 20 minutes. Season with fish sauce.
Garnish with chopped coriander. Serve hot, with rice.
The curry has that slight sourness that goes really well with the chicken.

Diana, this calls for two plates of rice for me hee..hee… As I scrolled down to the photos of ingredients being sauteed, I thought I smelt curry LOL!
I also wanted extra rice and some bread to mop up the curry gravy!
The nonya curry chicken looks easy to prepare and delicious too. I always had bad results with premixed curry paste, most of them are either too spicy or no curry flavour. This Ayam brand looks good, with glass bottle so that I can use half for a small dish and keep the rest for next meal cooking.
