barbecued pulled chicken mini-pies – an impossibly easy mini-pie recipe

The discovery of the ease of making very tasty pulled chicken for me is a little like cavemen discovering fire.

I guess when cavemen discovered fire, they must have ran around catching all these different animals to cook and eat.

Well, after I discovered the wonders of pulled chicken, I have been thinking of all sorts of things to cook. And eat, of course.

Since my family loves pies, I decided to make mini-pies with the barbecued pulled chicken I cooked. I guess I can claim to have made it even though my part in the cooking process was to sprinkle on some spices on chicken breast, and dump both the chicken and barbecue sauce in a slow cooker and press the start button. Haha. 🙂

These pies are a breeze to put together – they are impossibly easy mini-pies!

Here are the instructions on how to make them.

In a bowl, whisk together Bisquick mix, milk and eggs. There may be lumps in the mixture – it is okay.

Spray the holes of a 12-hole muffin pan with oil. Into each hole, add a scant tablespoon of batter.

Add about 3 tablespoons of chicken into each hole.

Top with cheese – I used Cheddar but you can use any cheese you like. Be quite generous with the cheese.

Divide the remaining batter among the 12 muffin holes.

Sprinkle some freshly ground coarse pepper and chili flakes if you like.

Bake at 180°C for 25-30 minutes, or until the pies turn golden brown.

Let the pies cool in the pan for about 15 minutes before transferring them onto a wire rack to cool completely.

The pies are good while they are hot, but also delicious when cold. They are great for breakfasts, picnics or whenever your kiddo wants a snack!

I like drizzling the pies with brown sauce before eating them. They are~really good!

For the filling
  1. 1 1/2 cups barbecued pulled chicken (recipe link in post)
  2. 1/2 cup Cheddar
  3. 1/8 teaspoon black pepper (optional)
  4. 1/8 teaspoon chili flakes (optional)
For the Batter using Ready-Made Bisquick Mix
  1. 1 cup Bisquick mix
  2. 1 cup milk - this can be whole milk or low-fat milk
  3. 4 eggs
For the Homemade Bisquick Mix
  1. 3 cups plain flour, sifted
  2. 1/2 tablespoons baking powder, sifted
  3. 56.7g cold butter or shortening

For the Batter using Ready-Made Bisquick Mix
  1. Whisk Bisquick mix, milk and eggs in a bowl until combined.
For the Homemade Bisquick Mix
  1. Place flour, baking powder and butter in a mixing bowl. Use a pastry cutter (or food processor) to cut in the cold butter until evenly incorporated. Keep in refrigerator for up to 4 months. (Note: You still need to add milk and eggs to this to make the batter for the pies)
Notes
  1. These pies can be kept in the fridge for up to 5 days, or in the freezer for up to 3 months in air-tight containers. Thaw over night in the fridge before re-heating in the microwave oven.
