one-pot bacon and mushroom pizza pasta

You cannot go wrong with bacon in anything you cook.

I repeat, you simply cannot go wrong as long as you add bacon.

I needed to make a quick dinner because, you know, exams are around the corner and I have all these extra lessons to conduct.

That also means I have no time to go to the (wet) market and my supply of produce is quite pathetic to say the least. I miss my butcher. 🙁

In the end, without much time and ingredients, I had a look in my fridges, and freezers and pantry, and decided if I had to cook with a few ingredients, I need something that can give the food a punch of flavor.

And bacon it was!

For something that took 20 minutes to cook from beginning to end, this was unbelievably delicious.

Because, yes, this is another of my one-pot pasta recipe!

Tasty, very quick, super easy, and one pot to wash at the end.

Here are the step-by-step pictorial instructions on how to cook this amazing one-pot dinner!

In a skillet, add a little olive oil. Once hot, cook the bacon until it is half-cooked.

Add the diced onion and minced garlic and continue to stir until the bacon turns brown.

Add sliced mushrooms and cook a further 2 minutes. Transfer all the ingredients into a bowl and set aside.

Heat the same skillet. Add the spices – Italian seasonings, dried oregano, onion powder, garlic powder, crushed red pepper flakes, salt and pepper. Give everything a stir.

Oh, the aroma!!

Add the low sodium beef stock (or normal salted beef stock and water in the ration 1:1). Stir to mix.

Add the pizza sauce and tomato paste and stir until the mixture is even. Bring this to a boil.

Add the pasta – I used fusilli but you can use any pasta you like – stir to coat the pasta. Reduce the heat to a simmer, cover the skillet and cook this for about 10 minutes, or until the pasta is al dente. Remember to give the pasta a stir once in a while. If the liquid dries out too much, add a little more stock/water.

Once the pasta is al dente, return the bacon and mushroom to the skillet. Stir to mix. Turn off the heat, add Mozzarella cheese and give everything a good stir to combine.

Sprinkle chopped Italian flat-leaf parsley, chilli flakes (if you like) and grate some Parmesan cheese on the pasta.

Serve immediately.

Ingredients
  1. 5 rashes bacon. cut into thin strips
  2. 1/2 onion, finely diced
  3. 3 cloves garlic, minced
  4. 2 teaspoons tomato paste
  5. 1 can (400g) pizza sauce
  6. 2 1/2 cups (600ml) low-sodium beef stock Or mix 300ml normal salted beef stock and 300ml water
  7. 2 teaspoons Italian seasonings

  11. 1/2-1 teaspoon crushed red pepper flakes (adjust to your preference)

  14. 1/2 cup grated Mozzarella
  15. 250g pasta I used fusilli
To garnish
  1. 1/4 cup grated Parmesan cheese
