I am not sure how I should start this post because I am literally (almost) bursting with excitement. 

I am totally, madly, head over heels in love with my new Bosch MaxxiMUM Sensor Control Kitchen Machine, AND I am crazy about the Ondeh Ondeh Cupcakes I made with it!

When I first heard about the Bosch MaxxiMUM Sensor Control Kitchen Machine, my first thought was, wow, impressive stats.

There is a reason why this is called a Kitchen Machine. Apart from beating batters and whisking cream, it also chops vegetables, grinds meat, blends, grates, juices, processes food, and you can even get pasta making, sausage making and ice-cream making parts to go with it. 

It was no wonder all I could say was WOW. 

When I started using the machine, my single WOW turned into a double WOW.

This is one seriously powerful machine. Because it has one of the most powerful motors (1600 watts) in the market right now, I was able to make my cupcakes in a much shorter time than I normally would. This is great news for me because I am always short of time and this means I can squeeze more cake-making time into my crazy schedule! 

In addition to the power, the Bosch MaxxiMUM Sensor Control Kitchen Machine also comes with a three-dimensional mixing system. This is possible because of the innovative 3-D Planetary Mixing accessory which moves in three directions at the same time. This means that the machine not only works fast, it also mixes evenly.

I made a batch of pandan cupcakes and stuffed them with coconut that had been mixed with gula melaka. This was topped with cream that had been whipped with coconut extract, and I added extra shredded coconut before the cupcakes were drizzled with more gula melaka. Sounds good? They were!

Let me show you how I made these delicious cupcakes using this amazing machine.

Start by making the coconut gula melaka. In a heavy bottom saucepan, add gula melaka, pandan leaves and water.

Simmer this for about 10 minutes then allow it to cool completely before adding it to the shredded coconut.

Mix well, and set aside.

Cream butter and sugar until the mixture turns light and fluffy. It won’t take at all long if you are using the Bosch MaxxiMUM kitchen machine so don’t walk away.

Add the eggs, one at a time and mix until blended.

Add pandan extract and mix to combine.

Sift the dry ingredients. Add this to the mixture in 3 additions, alternating with the milk.

Mix until the flour is just incorporated.

Divide the batter to fill 12 cupcake liners.

Bake at 180°C for about 18-20 minutes, or until an inserted skewer emerges cleanly.

When the cupcakes are completely cool, use an apple corer, or a small knife to remove some of the cake to make a hole.

Fill the holes with the coconut gula melaka. Set aside.

Whip the cream with caster sugar and coconut and vanilla extracts until stiff peaks form.

The Bosch MaxxiMUM SensorControl Kitchen Machine has a built-in function to detect the optimum stiffness of cream and egg whites and automatically stops when stiff peaks have been achieved so you don’t need to check or guess anymore! Very clever, huh!

Pipe the cream on the cupcakes. Top with a sprinkling of shredded coconut. Drizzle with gula melaka and serve immediately.

My conclusion is that Bosch has come up with a piece of machine that is a winner. You can see that much thought has been put into the design of the MaxxiMUM Sensor Control Kitchen Machine, and that the needs of the consumers have been taken into consideration, resulting in this totally functional and efficient machine.

I am positively in love! 🙂

For the Coconut Gula Melaka filling
  1. 200g gula melaka, cut into smaller pieces
  2. 150ml water
  3. 1/2 cup desiccated coconut - I used freshly grated coconut
  4. 3 pieces pandan leaf, knotted
For the Pandan Cupcakes
  1. 1 1/2 cups plain flour, sifted
  2. 1 1/4 teaspoons baking powder, sifted
  3. 1/2 teaspoon salt
  4. 3/4 cups caster sugar - I used 1/2 cup sugar
  5. 125g unsalted butter, at room temperature
  6. 2 tablespoons real pandan extract - I used 1 teaspoon pandan extract
  7. 2 eggs
  8. 1/2 cup fresh milk
For the Coconut Whipped Cream
  1. 1 cup (240 ml) heavy whipping cream
  2. 1/4 cup caster sugar
  3. 1 teaspoon (5ml) vanilla extract
  4. 1 teaspoon (5ml) coconut extract
To garnish
  1. Shredded coconut
  2. Gula Melaka

Notes
  1. For best results, serve immediately.
  2. Cupcakes can be stored in the fridge for up to 3 days.
