easy slow cooker beef ragu

This is a meal for all lazy busy Moms.

This is because the cooking is mostly done in a slow cooker. Slow cookers are one of the best inventions in the last century. If you do not have a slow cooker, seriously consider getting one. You can do so much with it and best of all, you don’t even need to thaw meat or vegetables before cooking.

Simply throw everything into the slow cooker, hit the start button, go do whatever it is you have to do, and 4-8 hours later, you have a meal waiting for you and your family. 

Because of my slow cooker, I was able to eat healthy home-cooked food even when I was a full-time teacher living alone. It was definitely a life-saver for me!

Today I am sharing a recipe for a Beef Ragu. A ragu is a sauce typically made with minced meat, onions, tomato puree, and red wine, and usually served with pasta. Of course there is nothing stopping you from serving this with rice, or couscous, or even a loaf of crusty bread.

The instructions for cooking this dish are few, because it is a slow cooker recipe. Since I had time, I took the time to brown the meat before I placed the ingredients in the slow cooker, but you can skip this step if you are in a hurry.

So, here are the instructions for this amazingly delicious dish.

In a casserole or skillet, brown minced beef in batches. Once brown, transfer the beef into the bowl of a slow cooker.

In the same casserole, after draining the extra fat, saute the onions for a minute. Add minced garlic and cook a further 30 seconds.

Add carrots and celery and stir to combine. Cook this for one minute. Transfer this into the slow cooker bowl.

Add mushrooms into the bowl of the slow cooker. It looks like there is a lot of food but it will cook down so don’t worry too much.

Into this, add chopped tomato, tomato paste, beef stock (or wine), herbs black, and pepper.

Cover, and cook on LOW for about 4-6 hours.

At the end, thicken with a corn starch slurry.

Season with salt and extra black pepper. Serve with pasta, or any carbs of your choice!

Ingredients
  1. 500g beef, minced
  2. 1/2 onion, diced
  3. 4 cloves garlic, minced
  4. 6 small carrots, chopped
  5. 4 sticks celery, chopped
  6. 200g brown mushrooms, sliced
  7. 1 can chopped tomato
  8. 3 tablespoons tomato paste
  9. 1/2 cup (120ml) beef stock or wine
  10. 1 teaspoon dried oregano
  11. 1 teaspoon dried rosemary
  12. 1 teaspoon dried thyme
  13. 1 teaspoon dried basil
  14. 1/2 teaspoon black pepper
  15. salt, to taste
  16. 2 teaspoons corn starch, mixed with 2 teaspoons water
To garnish
  1. Italian parsley, chopped (optional)
  2. dried chili flakes (optional)

Notes
  1. If using frozen ingredients, cook for about 2 more hours. If you are in a hurry for dinner, use the HIGH setting on your slow cooker. The cooking time should be reduced by about 1/3 to 1/2.
