sesame noodles with grilled miso-glazed salmon

One of the things that encouraged me to start blogging was the desire to show you, especially busy working Moms, that it is actually easy to prepare nutritious meals at home easily and quickly. 

So today I am sharing a pretty much effortless meal you can make – grilled salmon that has been marinated with miso served with spaghetti that has been dressed in a sesame sauce. This is an easy to prepare meal since the oven or gill does most of the work, and you do mostly the assembly.

The only thing to bear in mind is that you have to get started on the recipe an hour before you want to eat since the salmon has to be marinated. 

But all this means is that you marinate the salmon, let it get to know the marinade in the fridge while you go do other stuff, and come back to it when you are ready to cook!

And here are the step-by-step pictorial instructions on how to cook this yummy meal.

In a small bowl, whisk the ingredients for the marinade. (For differences in types of miso pastes and their uses, please see here.)

Pour the marinade in a flat dish and place the salmon, skin side up in the dish.

Coat the skin with marinade and cover the dish with cling film. Refrigerate for an hour.

At the end of the hour, wipe most of the marinade off the salmon and place it, skin side down in a casserole or baking tray which has been lined with baking paper. Wipe off excess marinade with a kitchen towel.

Spray or brush the salmon with a little olive oil. Grill at 180°C for about 10-12 minutes.

In the meanwhile, cook the spaghetti according to the manufacturer’s instructions in a pot of boiling salted water.

In a bowl, whisk together the ingredients to make the sesame sauce for the noodles.

Once cooked, transfer the noodles into the bowl and toss to coat the noodles.

Dish the noodles onto a serving plate and gently place the salmon on top, Garnish with sesame seeds and chopped chives. Serve immediately.

There is something magical about combining miso and salmon and sesame oil in a dish. The flavors just mesh together and you get this amazing combined flavor.

 

Try this for a weekday meal. It sure beats buying tabao (take-away) food!

Ingredients
  1. 2 pieces (about 250g each) salmon fillets, skin on
  2. 250g spaghetti
For the marinade
  1. 3 tablespoons white or yellow miso
  2. 1 tablespoon light soy sauce
  3. 1.5 tablespoons sake
  4. 1.5 tablespoons mirin
  5. 1/2 teaspoon sesame oil
For the sesame sauce
  1. 1/4 cup (60ml) light soy sauce
  2. 2 tablespoons sugar
  3. 3 cloves garlic, minced
  4. 2 tablespoons rice wine vinegar
  5. 4 tablespoons sesame oil
  6. 3 tablespoons canola oil
To garnish
  1. White sesame seeds
  2. Black sesame seeds
  3. Chives, chopped
