chocolate, cranberry and macadamia brownies | a review of Pyrex® sculptured glass bakeware

There are about 3 weeks left to Christmas!

My little ones are so excited!

This weekend we are putting up the Christmas tree, and soon presents will be added.

A season of good food, get-togethers with family and friends and lots of giving and receiving of gifts.

It is no wonder that the kids can barely contain themselves. 

This Christmas, I shall be doing quite a bit of baking to give away to my family and friends. I guess this is to be expected when one has a recipe blog. 

But I am happy to bake for people I love, and today I am sharing this recipe for a beautiful brownie with you!

Tender and moist, this brownie is made with dark Valrhona Chocolate + dried cranberries + macadamia nuts. 

I think this is a match made in heaven!

To make this brownie, I used my Pyrex® Sculptured Bakeware.

Brownies are really easy to put together.

Let me show you how.

in a heatproof saucepan, melt the chocolate and butter.

Mix in the sugar and vanilla extract.

Add the eggs, one at a time and whisk to mix.

Stir in the dried cranberries and macadamia nuts. 

IMG_9278Finally, stir in the dry ingredients until just mixed.

Pour the batter into a Pyrex® 8×8-inch baking pan that has been lightly greased. Smooth the surface of the batter.

Bake at 160°C for 25-30 minutes.

Allow the brownie to cool in the pan before cutting and serving.

Ingredients
  1. 60g dark chocolate, broken into chunks - I used Valrhona
  2. 113g unsalted butter
  3. 100g caster sugar
  4. 35g Prima Top/ Plain flour, sifted
  5. 1/2 teaspoon baking powder
  6. 1/4 teaspoon salt
  7. 1/2 teaspoon vanilla extract
  8. 2 eggs, at room temperature
  9. 50g dried cranberry
  10. 100g macadamia nut
Instructions
  1. in a heatproof saucepan, melt the chocolate and butter.

  4. Stir in the dried cranberries and macadamia nuts.
  5. Finally, stir in the dry ingredients until just mixed.
  6. Pour the batter into a Pyrex® 8x8-inch baking pan that has been lightly greased. Smooth the surface of the batter.
  7. Bake at 160°C for 25-30 minutes.

  1. Unless otherwise stated, I use 65g eggs for all my bakes.
