Easy Chicken and Potato Casserole with Lemon and Dill | Featuring Corningware Limited Edition Cookware with Peanuts Prints

Wow, it has been a long while since I last posted. But you know, I really miss posting on my blog.

Today’s post is a case of cuteness overload! If you have not been to Fairprice and seen the Corningware Limited Edition cookware with Peanuts prints that you can redeem with points till 6 June, then you must have been holed up somewhere really remote! Indeed, how can one not fall in instant love with this fabulously cute range of cookware from Corningware?

In celebration of Corningware’s 60th anniversary, you can redeem 4 covered casseroles, a carafe and a 2-piece mug set printed with Charles M. Schulz’s Peanuts characters at Fairprice outlets! Think Snoopy and Charlie Brown and the entire gang!

Dishwasher-safe Corningware cookware is made of Pyroceram, a glass-ceramic material that is resistant to thermal shock. This means that the casseroles can be taken from the freezer and used directly on a stove top, oven or microwave. 

This makes dinner prep even easier for me because I can prep the food in advance and the LAM simply has to take the casserole out of the fridge and place it into the oven and viola! dinner can be served in under an hour!

Let me show you how, using the 2.25L Corningware Limited Edition Peanuts casserole.

Season the chicken parts with salt and black pepper and set them aside. I used chicken thighs and dumsticks but you can use any part of the chicken you like.

Cut the vegetables you are using into bite-size pieces. Here, I have potatoes, carrots and shallots but you can also use zucchini, sweet potatoes, corn or any other vegetables you have in your fridge!

In a small bowl, add lemon zest, roughly chopped dill, salt, black pepper and extra virgin olive oil.

Into this, squeeze some lemon juice. Stir to mix.

Place the chicken and vegetables in a large bowl.

Pour the seasoning onto the chicken and vegetables. Add the lemon slices as well.

Use your hands to thoroughly mix this so that the chicken and vegetables are coated with the oil and seasonings.

Arrange the chicken and vegetables in the Corningware casserole. You can prep this dish to this point and place the casserole (covered) in the fridge for up to 2 days – a great way to ensure that you do not have to rush around to get dinner done for days when you know you are going to have little time to prep dinner.

Cover with the lid and place this into a pre-heated oven.

Roast at 180°C for 40 minutes. At the end of this time, remove the lid and grill at 240°C or about 5-10 minutes, or until the chicken is golden brown.

The best part of this is that you can serve dinner in the casserole since Corningware designs are always so beautiful. This means (yes!) less washing up at the end of the day!

  1. 2 pieces chicken thigh

  3. 2 shallots, quartered
  4. 2 small carrots, peeled and cut into bite-size pieces
  5. 3 small potatoes, quartered

Notes
  1. There is no need to add any water or other liquid as the chicken and vegetables will release some liquid during the cooking process and turn into a sauce!
