grilled chili lime chicken

Do you like lime? I love anything citrusy. So when I saw this recipe for a Chili Lime Chicken dish, I made a note to try it out as soon as I could.

Today I had loads of cooking and baking to do and I thought it’ll be great to grill some chicken for dinner.

It is really hard to screw this up because chili and lime go really well together. Add some coriander (YUM!) and the flavors get bumped up even more.

And with all grilled chicken dishes, this is really easy to put together. Here’s how.

In a bowl, whisk together lime juice, lime zest, olive oil, coriander, jalapeno (or green chilies), garlic, honey, salt and chili powder.

Pour this over the chicken and mix. Cover the bowl with cling film, leave this in the fridge for at least 2 hours to marinate.

To grill, place chicken skin side down on a baking tray. Brush or spray with a little oil and grill at 180°C for 15 minutes. 

IMG_5933Flip the chicken over, spray a little more oil and grill for another 15 minutes or until the skin turns golden brown.

And this is it. Super easy, and super tasty.

  1. 1kg boneless chicken thigh
