Oh my god!

I fell in instant love this week!

The fabulous folks at World Kitchen Asia sent me this Pyrex® oblong glass baking dish and it comes with this gorgeous turquoise carrier bag – perfect for bringing food to the upcoming parties and gatherings for Christmas and New Year holidays!

I love how the glass baking dish comes with its own lid – it really is great for storing both hot and cold food. Made in the USA, Pyrex® glass material is non-porous and non-reactive and does not contain any food particles, odor or stains. It can be used for roasting, baking and storing food and is a truly useful kitchen tool!

Today, I am sharing a super, duper easy Mediterranean salad recipe that takes no time to prep, but tastes so fresh and good, you will wow all your relatives and friends! 

Apart from cooking the pasta, there is no other cooking involved in the preparation of this salad. It does, however, involve loads of chopping!

Let me show you how easy this is to put together!

Start by bringing a pot of salted water to a boil. Cook the pasta according to the manufacturer’s instructions until the pasta is al dente. Drain and set the pasta aside to cool. 

Peel and thinly slice the red onions. I soaked the sliced onions in cold water for 10 minutes to take the bite out of the raw onions but you can skip this step if you like the taste of raw onions.

Halve the cucumbers and slice thinly.

Halve the cherry tomatoes. If the tomatoes are big, quarter them.

Place all the vegetables and the cooled pasta in a big bowl and toss to combine.

To make the salad dressing, simply add all the ingredients into a jar with a lid.

Sprinkle on crumbled feta cheese and sliced black olives. Cover the baking dish and chill the salad until you are ready to serve.

When you are ready to serve the salad, simply give the jar of dressing a good shake and pour over the salad. Toss to combine and tuck right in!

For the salad
  1. 350g pasta
  2. 2 medium red onions, thinly sliced
  3. 2 medium Japanese cucumber, halved and thinly sliced
  4. 1 pack cherry tomatoes, halved
  5. 90g Feta cheese
  6. 20g black olives, thinly sliced
For the dressing
  1. 60ml extra virgin olive oil
  2. 45ml red wine vinegar
  3. 15ml freshly squeezed lemon juice
  4. 30ml honey
  5. 1 teaspoon dried oregano
  6. 1 teaspoon crush dried red chilli
  7. 1 teaspoon salt
  8. 1/2 teaspoon crushed black pepper
Instructions

For the dressing
  1. Add all the ingredients into a jar with a lid. Shake well to combine.
  2. Pour the dressing over the salad. Toss to combine.
  3. Serve immediately.
